Although cauliflower rice is my preferred accompaniment to curry, it may be paired with any vegetable of your choosing. Zoodles and cabbage noodles are excellent at absorbing curries, or you could substitute cauliflower with shirataki rice.

Ingredients

Cauliflower Rice:

  • 400 gram cauliflower rice
  • 3 teaspoon fresh garlic minced
  • 3 tablespoon coconut oil
  • ½ teaspoon ground turmeric
  • ½ teaspoon dried basil
  • ¼ teaspoon chili flakes

Fish with Coconut Lime Sauce:

  • 16 ounce cod filet
  • salt and pepper to taste
  • 2 tablespoon coconut oil
  • 2 teaspoon fresh garlic minced
  • 1 medium lime juice and zest
  • 1 cup canned coconut milk
  • ½ teaspoon ground turmeric
  • 1 teaspoon dried basil
  • ½ teaspoon chili flakes
  • ½ cup fresh cilantro chopped, for garnish

Instructions

  1. Collect and prepare all of your ingredients.
  2. Heat a pan over medium heat and add coconut oil and garlic to it for the cauliflower rice. Add the cauliflower rice, turmeric, basil, and chili flakes once the oil is heated and the garlic is fragrant. Stir frequently while cooking until moisture is eliminated. Set aside.
  3. Combine coconut milk, turmeric, and salt and pepper to flavor in a bowl.
  4. Sprinkle salt and pepper over the salmon. Heat coconut oil and garlic in a separate pan for the fish.
  5. After the garlic has become aromatic, add the fish to the pan and cook on one side. Pour half of the citrus juice into the pan.
  6. Flip the fish, and then pour the coconut and turmeric mixture over it. Restore the heat to the pan containing the cauliflower rice in order to reheat it if necessary.
  7. Combine the basil, jalapeno flakes, lime zest, and remaining juice. Bring the mixture to a simmer and allow the salmon to cook completely, which should take approximately 4-5 minutes.
  8. Place the cauliflower on a plate, followed by the salmon. Finally, drizzle the coconut milk curry over the top. Serve with minced cilantro as a garnish and relish!
